I am on an F-1 visa right now, and soon will be on Optional Practical Training (OPT). I already filed an I-526 petition and expect it to be approved soon. After I get my I-526 approved, am I allowed to work while doing an Adjustment of Status? What will I need to do to maintain a valid status in the United States?

Your status after filing the adjustment application is "pending adjustment" and OPT. OPT gives you work authorization for one year or longer, if you are STEM qualified, and after 90 days of filing the adjustment you should receive an employment authorization card combined with travel permit, which is what you work with if your OPT has expired. However, just in case your I-526 does not get approved or not on time, I would recommend that you maintain your status as F-1 after OPT expires, which does not let you work. Or, your OPT employer could sponsor you next spring for H-1B and hope you will be chosen for the lottery and get approved.
